I like to have something where I can keep a file on someone, add picture, back it up to my PC and move it back from PC to Ipad if possible.

Notability: You can sync notes to your PC with either Dropbox or Box, for example.

Evernote. It will be available just about everywhere.

Evernote Hello might be a good helper app for this, though it's an iPhone app, so it wouldn't look all that great on the iPad.
