If you mean auto-correct, then there is no way. You can either turn it off and not use it or restore the iPad to a fresh iOS and it will start again. Supposedly, it's supposed to learn how to auto-correct (I believe I've read that somewhere).
However, if you mean to change, delete or add your own shortcuts, then go to Settings > General > Keyboard > Shortcuts and either edit an existing one or make a new shortcut.
Sometimes, I get tired of auto-correct making changes to my typing, so I'll make a shortcut for the phrase that I want. This does prevent the auto correct from kicking in and changing the word away from what I intended.
