"Cloning" My iPad 2 to a New 3?

I currently own an iPad 2 but have a new (3?) coming in Friday. I have backed up my 2 in iTunes (Back up to computer). Can I now just plug in my new 3 to my computer and basically "clone" it to be an exact copy of my older unit? Surely it's not that simple!

Not only is it that simple, I do that exact procedure as a developer so I can test things and then revert back to a know stable state.
