Deleting apps forever?

I am trying to delete or get rid of apps from my account and also trying to rename stuff I have on iBooks all in the iTunes..I tried going to my files in iTunes music under apps and books and deleted things there directly into my trash and also renamed things there but they do not appear with the new name nor do they go away...Also iCloud can be a nuisance by reloading certain things I try deleting in iBooks? Anyone know where I can find all the answers to iCloud and the syncing process on iTunes?

you have to turn off icloud first and then delete it off your ipad first and then try to reinstall it.
