How do you stop the emails telling you that there has been a post to a thread or post you started.

You are subscribed to that thread. If you want to un-subscribe to the thread click thread tools right above the thread and click un-subscribe.

For a universal fix, under UserCP, go to Edit Options and set your subscription preferences with the drop down box:

Default Thread Subscription Mode
When you post a new thread, or reply to a topic, you can choose to automatically add that thread to your list of subscribed threads, with the option to receive email notification of new replies to that thread.
Default Thread Subscription Mode: No Email
