Excel files/attendance/gradebook question

Are there any apps that let you toggle a field in a spreadsheet just by touching, without having to enter text? I'd like to tap to add an x for example, or a number, similar to checkmarking in a writable pdf. There doesn't seem to be an easy way in advance to tell which, if any, excel-compatible apps let you do this... I've seen the attendance app which lets you do this in a limited way, but want something both more basic and more flexible.

Numbers will let you format a cell to contain either check boxes or star ratings (1-5).
I haven't had occasion to use these features yet so don't know if you can do arithmetic on them.
