Hi, how do I change the calendar to start the week on a Monday rather than Sunday?

If you go to Settings > General > International > Regional Format and change it to United Kingdom, it will work. You'll have to either restart the iPad, or close the app in the multitask bar before it will take affect.

This will also change other display formats, like dates, time, phone number, zip, etc. Several other country options will probably do the same thing, with various changes in various other things.
