Right click other the itunes devices and restore from a previous backup

If you'e been syncing/backing up with iTunes or iCloud you can restore from that backup.

If you have not been doing so, then your only choice it to individually download your apps and iStore content again. For the most part this should be free, if tedious. Any files or document contained in apps, or media not purchased through iTunes is not recoverable without a backup gone. You progress in games is also gone without a backup, and in some cases even if you did have a backup.

This article will expand somewhat on iFrog's post, and covers the iCloud backup options as well. iCloud backups are only if you have iOS 5 and an iCloud account.

I went into settings in an angry moment to clear everything from the iPad so that I could give it to my husband to use with nothing of mine on it! I pressed the wrong button and now wen I switch it on all I have is a black screen with a itunes symbol and a cable! I hav no idea what to do!
 
Glad you worked it out. That's what the erase everything option does. It is meant to make sure you can sell or give away the iPad in the same state you received it in. Basically it's the same as restoring on the computer. (not the same thing as restore from backup)
