So, I've been given a new iPad mini. Can I choose what I put on it from my old iPad? In particular I don't want any of the photos at all on the new iPad. I'm sure this must be simple, but I just can't work it out and its driving me crazy!!!!!

If you still have the old iPad, plug it into iTunes and remove all pictures (unsync them). Then, make a backup.

Then, unplug the old iPad and connect the new iPad. Find the line "restore from backup" and press it (usually, it's accessible by right-clicking on the iPad line). Once iTunes has done its magic, you should have an iPad Mini that matches your old iPad.

If you don't still have the old iPad, hopefully you have a backup for it; hopefully, it won't be too old. But, you can still do the "restore from backup." After iTunes is done, unsync the pictures that got put on.

Your iPad mini will have its own log on to iTunes. Before you sync make sure that the sync for photos is not ticked. That way you can keep the photos on you old iPad.
I did this with my new iPad mini. Photos are still on my iPhone.
