How do I know that this app is secretly not accessing my media?

Good question, which goes with how private is your cloud use? I gather that google's cloud analyses everything you store on it, although whether true or not.... (I think that Apples icloud, Box and Dropbox may be safe, but who knows.)

To my mind the only safe place is a disconnected drive, data CD, DVD, etc. or USB memory stick sitting in a drawer at home.

As for apps with cookies, etc. ?

Well , I am aware that cloud security is somewhat a fairytale , however this app claims that there is no cloud, it doesn't store the files anywhere, they're stored locally on the iPad only , how do I verify that though.
 
You could write to the Developer to see if they will confirm their claim. In the end it's all about trust, but if you don't want want anyone to see your photos you are going to need to store them off line.
