How to stop processes

Downloaded a system tool and noticed that ram memory is mostly consumed with a "other" processes. Almost 100%. It is making my system very slow. Does anyone know how to identify the processes running and is there a way to selectively shut them down? This has happened since the operating system upgrade with multi-tasking.
 
Ok I discovered I have a muti-task bar and that shutting down apps from their gave me memory back. But there is still quite a large amount of memory consumed by the "other" processes. How can I see what these are? And how I might shut them down?
