Just go into 'Settings' -> 'Wi-Fi' -> 'Network', i.e. the network that you are connected to which should show you the IP address of your iPad - image below shows my home network; the IP address of my iPad is 192.168.1.104 - now the 192.168.x.x is assigned by my router - my connection to the internet is triad.rr.com (not sure what the IP address is to the router assigned by my Road Runner ISP) - on my laptop running VISTA, I can go into a command window and enter 'ipconfig /all' to see that router assignment. Now if you are in a 'public' (e.g. hotel, Starbucks, etc.) Wi-Fi hotspot, then the IP address is likely different.

Good point, Giradman. I usually check my IP address on external sites to check that my VPN is working. I switch out addresses depending on where I want to stream content, buy apps and the like. Sometimes one of my VPN provider's addresses seems overloaded, so I switch to another on a long list of IP addresses that it offers.
You can find the public ip address of the ipad by visiting the site IP-Details.com .
They will provide your ip address along with other information like your Internet Service Provider,Location,Country,etc.,
