IPad in a tow truck

I want to use the iPad in my tow truck, first as a mobile DVr were I can run 2 to 4 cameras and record 1 as a backup camera
Second I want it to work as a gps with the option to mark way points so I can see if have repos in the area
Third for onsite receipts and printing

Any ideas on how to do any of this is appreciated
