How do I change the keypad so I don’t have letters and numbers on the same key iPad 7

You would have to use a third party keyboard app.

Lots of third-party keyboards are available in the App Store. I sometimes use one called PadKeys, which does have a number row above the letters. The problem is that adding more keys requires making all the keys smaller and closer together, so it's harder to type accurately.

I’ve tried a couple of the apps and they all have numbers on the letter keys. Starting to miss my old iPad 4

Do you mean the small gray numbers (and symbols) above the main character?

If you swipe down on those keys you get the number (or symbol) instead of the main key character. Since the feature became available, many third party keyboards have adopted the same or similar layouts.
