Once you hold your finger on the app icon and it starts wiggling, drag it to the edge of the screen so that it's about half off the right or left side, and it will slide onto the next page.
You also know about creating app folders, right? Just drop one app onto another, and they will go into the same folder, and you can name it anything you want, like utilities or action games, etc.

Either that, or connect the iPad to your PC, fire up iTunes, select iPad and rearrange the apps from there. Once you finish don't forget to sync.
For moving multiple apps across screens, I usually use iTunes, as it is quicker.
