The game I have been addicted to since It ever came out for the iPhone was tower madness and now it is even better with the iPad version.
 
For me are:

Dropbox (help transferring files)
Notability (notes but records conversations as well)
Flipboard (great to following news as a magazine style)
Friendly (Facebook app)

Atomic Web (browser)
Goodreader (multipurpose document reader/file cabinet :))
Boxcar (notification system)

Google Voice (text app)
Talkatone (telephone app)
TuneIn Radio (internet radio)
Facebook (iPhone app, but still the best one I've found)
1Password (keeps all passwords and files; accessible via the web, also)
Photo-Sort (photo manager/transfer)
XSysInfo (iPad "cleaner"/system manager)
Words HD (Words With Friends - Scrabble-like game)

I could go on (I have a lot of apps that I use on a regular basis). But, these are ones I use daily (or almost daily).

Well, really depends on your needs and what other computer options you have available (e.g. word processing)?

Wife & I are new to the iPad2 - our main purpose for purchasing this device was as a possible replacement for an old laptop that we take on the road - will give this a try over the next few months (along w/ a BT keyboard); my music is on an iPod Touch, so will likely not duplicate it on the iPad.

But, I must say that reading PDFs, magazines & books on the device has been an easier process that I thought; photography apps are also important for me during travels, so the ones I've added to date are below but I'm sure many more will be applied as our needs are better defined & expanded:

GoodReader - great for PDFs, but just discovering the power of this one!

Zinio - already have subscribed to several mags - will likely add more!

OverDrive - checking out books from our local library.

iBooks & Kindle - downloading 'free' books, manuals, etc.

SmugShot - use SmugMug for uploading my photos - makes it easy.

Photogene & Photo-Sort - need to learn more about these apps.
