There are many note taking apps and it really is a personal choice and also what features you would like but have a look here

Welcome to the forum!
There are a number of threads discussing note taking apps for the iPad. A quick search using the Google feature (top right-hand corner of every page) turned these up, feel free to post questions or comments there...
