Is it possible to print from an application? I.e. eBay, notes, maps,etc.

Yes, but it depends on the application as to whether it is supported. You can always do a capture whatever is on the screen to a photo (hold down home and sleep/wake/power buttom together until the screen flashes).

Can you tell me which apps will have a print option?

Lots of them do. Can you be more specific in terms of what you are after? Are you trying to print? Printing on an iPad requires either an Air Printer or an app that provides that function for you. For example, I have a Netgear router and Netgear provides a free app that makes any printer on my computer an Air Printer. So I can print over wireless from my iPad with just a standard printer.
