Restore to earlier backup - iPad

Hello - I recently connected my iPad to iTunes to sync some photos to show family at Thanksgiving and for some reason it removed almost all apps and content. I have some very important documents that have been edited in the app "PDF-Notes". All those documents are now gone. I attempted to do a backup but it only shows the backup from when I connected my iPad today. Is there a place or way those older backups are archived, and accessible? Thank you for any advice.

Plug it into the computer you sync it with. Right-click on the iPad in the source list at the left, then choose Restore from Backup. It will ask you which backup you'd like to restore.
