There's a thread that I see that's about "securing the iPad at launch" that when I see it I think it's about security of the iPad (it's actually about getting an iPad2 when it's released). Sooo.....
What about security and privacy on the iPad? I force SSL on email, use a couple of encrypted notes programs, disable the "simple" 4-digit password for the device itself and turn-on the "strong" password. I use a VPN for sensitive documents with work.
What else do you do to enhance the security and/or privacy of your iPad?
