I am on IOS 5.1.1. I have the iPad 2 and iPhone 4S on iCloud. How do I change the default email address when I invite people to a scheduled meeting? Thank you.

You're in the right area.

Under the Mail header in Settings > Mail, Contacts, Calendars you should have a Default Account setting. This will set the default From email address used when other apps generate an email. It will probably work for whatever you are doing as well.
