Syncing photos - select sub-folders?

I'm fairly new (2 months) to the iPad. I have had an iPhone for years and thought that since they both run on OS5, things would work the same way on them. But I am finding that there differences that confound me. One of them is in syncing photos. In iTunes for the iPhone, under the sync from selected folders, I can select sub-folders, eg. My Pictures > iPhone > 2010, 2011, Grandchildren, etc.) However, in itunes for the iPad I can only go down to My Pictures > iPhone. This way, I loose the ability to select the photos by folder on the iPad. Most frustrating. Any ideas on how to do what I want for the iPad?
