Figured it out.
I preferred the old version where you could delete messages from one contact at a time.
Now, if you want to delete a message from a contact you must delete ALL messages at one time.
It clears all of your history.
This is what you do:
Click on the "MORE" link along the bottom of the app .... Then " clear message history "

Dear Ayrshire... I had the same problem just 10 minutes ago and googled and got your post. I think it's completely ridiculous that you can't delete messages from one contact at a time. In fact you used to be able to delete individual texts within a string, or all texts from one contact. Neither feature exists anymore.
Now, as you noted, your only option is to delete all message history for all contacts. Which BTW always existed as an option.
Which means pictures of the girls sent from my wife need to be deleted just because an interchange between me and a mate (that got a bit silly and vulgar) and for which I don't want my daughters to pick up the phone and read.
Hope they resolve quickly. Completely inconvenient. No text App I have ever seen is missing such a basic and necessary feature.

Well this doesn't sound like a good update at all!
The best thing to do is to get in touch with the developer and let him know your disappointment in this new update......if enough people do it, the Dev just may change this back again.
If you still have the old version of Viber in iTunes and haven't updated it there, then it is possible to put that version back on your iPad. Having said that the update may need to be done in order to run smoothly on IOS7.

Go to Message and select the message conversation you want to delete, swipe the message (from right to left) and you will see the red 'X' to delete the message.

Yep, you just have to swipe the thread to left. That's it
