To center the image in both landscape and portrait...the image needs to be 1024x1024.

There's a slick little iPad app called Pimp Your Screen that has a number of wallpapers that work in both portrait and landscape modes. (Be sure to pick the iPad version if you buy it!)

It is better to pay for some meaningful one in itunes..

Or, if you're just using your own pictures; when you select the picture in Settings, be sure to go back and forth between landscape and portrait when zooming in and out and dragging the picture. Accept it when you've got a view you like in both modes.

Of course, not every picture will accommodate this treatment, but many will.
