How do I stop every email address that I contact from automatically being added to the "contacts" list??

Under Contacts in Settings, you would need to go to Accounts and then toggle off the Contacts option For each email address.

You’re welcome! I can’t quite remember what the 7 was for, but probably because plain “Jupiter“ was taken
