Chinese Noodles

Cooking time: 30 mins
Ingredients
2 cups of noodles
1lb of minced beef.
Mature cheddar
Tomato soup
Chinese spice
Green peppers(or red)
Mange tout(if you have it)
Onion
2 tbsp sugar
Cooking Instructions
Brown the onion and then the mince. Add the tomato soup with all the other ingredients. Boil the pasta and then in a large rectangle dish add and mix ingredients together and cover with mature cheese for topping. (leave space for boring Colin) cook under grill until brown (and crunchy for Karen). Serve.

I've just had a tomato pasta concoction from my eldest with smoked sausage and spices. It's so nice to have kids who can cook as well! I am spoilt. I gave her a lift yesterday so she owed me.

The following is one of my favorite recipes.

Pork and Chicken Adobo

The recipe for adobo.
Yes in metric just convert for American measure.

Adobo is Filipino’s all-time favorite dish. A classic one inherited from our great colonizers the Spaniards but definitely filipinized to adopt to our palate. Adobo is so versatile we can almost do it with different kinds of meat, fish or even vegetables. Try this beautiful blending of chicken and pork simmered to perfection! Take note that they taste even better the next day!

Ingredients:

half a kilo of chicken cut into serving pieces ( Can be chicken wings or thighs)

half a kilo of pork cut in cubes (about 3- 4 inches) ( Pork Belly is perfect for this)

one clove of garlic, minced

1 tsp of grated ginger

1 tsp of peppercorn whole is fine

1 tsp of sugar

1/4 soy sauce

1/4 cup of vinegar

Procedure:

The secret to any adobo is the marinating sauce. And the key to its success is slow cooking. In a salad bowl mix half of the pounded garlic, with sugar, peppercorn, vinegar and soy sauce; mix well. Put the cut chicken and the pork into this mixture and cover it. Let it marinate for about 24 hours. The next day put the marinated chicken and pork along with the sauce plus half a glass of water in a casserole and cover it. Let it simmer slowly over medium heat until the juice of the meat has come out and the sauce has reduced.

Best served with thai rice.

Note one can cook straight away however just cook the adobo slowly. Some times we do not have time to marinate over night. It is still an amazing inexpensive dish even if cooked straight away.

Okay, I'm eating something yummy today! Chocolate Easter egg with bunny shaped marshmallow and a cup of hot chocolate with cinnamon, cream and those little marshmallows on top! Yes, I know it's over the top but hey! It's Sunday and I'm reading alright, we girls need our comfort food after s stressful week

I love cinnamon and hot chocolate too!! I'm afraid I've also a weakness for a Starbucks skinny venti cappuccino with either chocolate or vanilla on the top....

Yes, Joy wished my a happy mothers day too. Why do they have it on different days. I've often wondered? Ahh! Starbucks is a luxury but definitely worth it! I also go to the COSTAlotta as my mum calls it! We have one in Yeovil. I try not to drink too much hot choc but it is difficult when you go past these places. I love coffee too especially cappuccino. I drink Kenyan or Brazilian at home, nothing quite like freshly crushed coffee beans is there!
I had a science teacher once, who loved coffee and got withdrawal symptoms because his wife decided to get him decaffeinated coffee instead and he didn't know!. He wasn't impressed, I can tell you! Needless to say he still drinks proper coffee!

When I first met my wife - before we were married - she used to drink twenty - yes, 20 - cups of coffee a day. But she switched to decaf - but I can't stand decaf. I even have my own coffee roaster at home and buy fresh green coffee beans and roast them myself. It's a great thing to do. You can get an automatic coffee roaster quite cheaply and it's great fun.....
