I love Thai food of all kinds. I live in Puerto Rico where the climate is very similar to that of Thailand and even some of the edible flora is quite comparable, though the gustatory palate could not be more different. The Puerto Rican kitchen eschews spicy, "hot", food items at all costs. Caribbean Latino dishes are quite different from the more well known Mexican cuisine which does espouse spiciness to a nearly religious level.
Anywho..... I have been experimenting with a very east-meets-west mindset. I have as of late been substituting
mofongo for white rice when making
Thai curry dishes. If you are familiar with Caribbean cuisine and are looking to make something different and unexpected, give it a try.
