Got VPN connecting but what do I do now to get the IPAD2 to connect to the server and open programs?

Other than security what is the VPN on the IPAD2 actually for?

Depending on your VPN setup -- if you get an private (internal) IP address from the connection, you are virtually inside the office/home. You can browse (http/https) your web servers, RemoteDesktop (need Remote Desktop application -- I use RDP from the app store) to your Windows servers, telnet/SSH (if you are jailbroken)...etc..
