iDevices and Itunes management, HELP!!!

Hi all,

I am a noob when it comes to managing devices on iTunes. I have a iPad 2 and iPhone 4. My wife has a iPhone 4S. When we plug in our devices it seem that we have to sync all the apps that were downloaded to all 3 devices. I want to just have certain apps on the devices, it wouldn't make sense if i had to sync up my iPad 2 with iPhone 4 apps or vice versa. How do you go about to manage each device separately?
