Thanks again J.A. I reckon you've cracked it.
As you can see, in Safari, Favourites I seem to have 2 Favourites folders, the top one being the starred folder and the second one is the 'rogue' Favourites that seems to have appeared from nowhere and 'stolen' all my links.
It was this second Favourites folder that was ticked, so I moved the tick to the 'starred' Favourites, and lo and behold, all the links jumped back to the correct folder.
I've absolutely no idea where the second Favourites folder came from. I don't remember creating it, or ticking it, and I'm still intrigued as to why I cant edit it.
However, I'll just have to remember to ignore it in the future, and be very careful where I put my 'ticks' in the future.
Once again, sorry for labouring this but it was really bugging me, and thanks again to all who helped solve it, especially J.A. [emoji106]
