I should also add that because of the nature of my iCloud problems, I can only access certain documents when my Mac is physically open and on a wifi connection.

Simply backing up to Mail or iTunes is risky because they're included in the iCloud backup system, so my Mac is needed as an intermediary device for transferring specific documents created on my iPad onto an external hard drive.

If I didn't have my Mac as well, I'd be sunk.

Couldn't you just back up to box.net or Dropbox? You can get 5 GB of free space on each if you have lots of docs.
