how do you open a subject in the index? touching it doesn't work

You must be talking about the PDF version, since the iBooks one does not have an index.

The answer is you read the page number then go there. The Index does not appear to be linked, so you're stuck with the old fashioned page turning, though most PDF readers have a GoTo option that makes this a might faster.

Or you could use search, also included in most PDF readers, and what you'd end up using in iBooks.
