The iPad does keep track of the time and date of your photos - the problem is that you need another app to view that data (the EXIF data). I use the [free] app "Photos EXIF" (I outline it here in this thread (post #2): http://www.ipadforums.net/ipad-apps/108454-how-tell-size-pic-ipad.html).

Maybe it'll help you for what you need?
