On my iphone when I type, the letters/numbers show (pop up). How do I get the same on my ipad please?

You won't get that on the iPad, sorry. Apple designed that action on the phone so you could see that you hit the correct letters on the keypad. A lot of people's fingers covered the keypad and you just couldn't see the letters.

With the iPad, your fingers don't hide the keys (they are large enough). So, no pop-up.
