Oh, do I have suggestions! 
Have a look at this thread (which is our "ultimate tweaks from Cydia" list): http://www.ipadforums.net/showthread.php?t=25824
We keep it pretty much up-to-date, so unless it specifically states in the sticky that the tweak doesn't work on the iPad3, then your pretty safe installing any/all of them. I can attest the iPad3 runs fine jail broken.
What I'm running right now (aka "my faves"): SwipeSelection, iKeywi, Action Menu (Plus) and Zephyr. I've got more, but these really help me use the iPad the way I wish. it's a tuff call between SwipSelection and iKeywi as to which I like better. But, since I can have both - I don't have to decide!
So, have a browse through the Hacking section here. It's chock full of tips, tweaks, etc. - you'll get lots of ideas there...
