I assume its ok to use it
while plugged in charging??

It is fine to use your iPad whilst it is charging, I often have mine plugged in whilst using it.

It just takes longer to reach full charge if you're using it at the same time, that's all.

There is a way to customize it for each email account you have, however this is a new feature with the ios 6 update.

However, if you don't have the recent update you can add a generic signature by going to:

Settings/Mail, contacts, calendar/signature ....and than typing your signature to appear on all.

If you go to: settings/general/about/usage/version.

There you will find your version of ios. The most current it ios 6.
