Partial Syncing to icloud

I don't want everything backed up to iCloud. I still want some things backed up to my computer.

Store on iCloud:
Reminders
Bookmarks
Notes
Documents & data

Store on computer
Contacts
Calendars

When I go to turn on iCloud backup it says "your iPhone will no longer back up to your computer automatically when you sync with iTunes"

What exactly does that mean?

Can I still sync my calendar and contracts to my computer?

Also, if I do this will my Notes on my iPhone be synced with my Notes on my iPad?

Had anyone tried using the cloud for just some of their apps?

I use it for photos only. I get them on my iPad and iPhone that way.

How do you retrieve what's stored in the cloud? I backed up some document and it's not showing back up in numbers
