Please explain about backup and restore.

I have a ipad 1 JB 4.2.1 with 60 GB of data on it, movies books etc.
If I backup with itunes.
And then update to 5.1.1
And then want to restore back to my JB 4.2.1.
Will the itunes restore from the old backup do this so I would be back to my jb 4.2.1 with all the movies books apps?
