In ibooks, it have a documet open and the bar dissapears so that you can read the whole page, what gesture is it to get the toolbar back?

Should just be a tap on the screen. Could be on the top or bottom portions depending on how it is usually set up per book.

Tap in the middle of the screen. If you tap too far right or left you will just turn the page. You can tap again to dismiss the tool bars.
