I did just update to iOS 7.1, but I had the same problem before the update. This only happens with my Optimum email account. There is no issue with my Gmail. Thanks very much.

I'm having the same problem with my Mail account since upgrading to the iPad Air. My settings are the same as my wife's and hers works; mine don't and have not since I got the new iPad. I restored all my settings from a backup from my original iPad 1. I'm wondering if this has anything to do with my adding an iCloud account in the Mail App? My provider is Comcast and I also use the Comcast XFinity App for email but frequently when filling out forms an email reply will default to the Mail App. Very puzzling.
Perform the steps in J.A.'s useful post. If it does not help, you can try a hard reset. HARD RESET : Press and hold the home and power button simultaneously for about 10-20 seconds until the Apple logo appears. You will NOT loose any data.
