Should you update Apps while still in old OS?

Good day everyone!

I am currently still running iOS 7.1.2 and have decided to stay there until a more stable version is released.

However, apps are now starting to launch versions that are "updated for iOS 8" and the like. Is it wise to update these apps, or should I stick with the versions I have right now?

If the app says that it will run on your iOS, there is no harm to upgrading it. It may run better, in fact.
