Syncing a new iPad with iTunes backup from an older device

I am planning on purchasing a new 3G iPad in Jan and currently have a 16GB Wi-Fi model. I am planning on giving my current iPad to my wife but was wondering how to get all the apps I currently have to the new device and if it's possible to leave the apps I have on the old device. We have been sharing the old iPad and it has several apps on their that are strictly for her use.

I wasn't sure if iTunes would associate the backup to the old device and not allow to restore to the new one.

Just rename it differently and use it on the same iTunes account. It shouldn't give you any problem transferring/syncing to both devices.
