Syncing multiple devices same computer

Unless I am missing something why is it that iTunes only let's you automatically sync with one library?

Its like everyone in the family has to use their own computer/account. I manually sync because of that, but that is not any easier because I can't organize files into sub folders.... Or can I ?

Can you guys advise how you do it.... Or am I correct in my assumptions

If you create multiple iTune accounts, You may use a single PC with a Single iTune for multiple devices .
There are many post in that regard, in the forum.
