Transfer everything from iPad 1 to iTunes 10.7

Hi I recently updated iTunes to 11 and I didn't like it, so I chabged back to iTunes 10. The problem is all of my playlists got deleted off my iMac but they're still on my iPad. My question is: how do I transfer everything thats on my iPad to iTunes. That is apps, videos, notes, calendars, but mainly the playlists and playcounts. Someone please help me before I go back to Windows...
