Have you tried closing down the iPad completely, then go to App Store and try to buy the book again and it should say its already downloading do you want to cancel?

Not sure how you can delete a default apple app? But this is a new update. It will show all books you have bought but they aren't physically on your iPad unless you download it. This is the same for Kindle books. Not sure why this is a problem for you.

Ah, but iBooks isn't a default app, you have to download it from the App Store.

Of course it is! Oops. So what's the problem? No iBooks, no problem. Surely?
