First post, my intro to Ipad air 2, and apple ID problem

Ok, I have never touched a Mac or an Apple. However, my mother, who is 83 and nuts just bought a new Ipad Air 2. BTW, I am a technology coordinator for a large organization, so I am familiar with computers. So, she tries to set it up, having no idea what an Apple ID is, and somehow, she set it up with an email that is totally wrong, non existent. So, now I have to learn all about these things. My first problem that I need to resolve is to delete that bad email address, which shows up in the iCloud part of settings. I tried to reset to factory settings, but, I do not know the password. Any help or ideas appreciated.
 
BTW, I was able to set up a good Apple ID and PW, and did so through the iTunes & App store.

It's possible to reset the password without using the email address. If she set up security questions or 2 step verification, you don't need the email address for authentication. If she set up a rescue email address, different than the iCloud ID, it should be possible as well.
Here are the instructions:
If you forgot your Apple ID password - Apple Support

If you can't reset her password and remove the wrong ID from the iPad, it's locked and can't be used any more. It's not possible to find a way around iCloud's activation lock.
In that case, visit the next Apple Retail store, and make sure you can prove that this is her iPad (billing). You should get help there.
