4 fist sized potatoes cut into spoon sized pieces
2 large carrots cut into same
1 celery stalk cut into same
2 large cans razor clams
1 medium white onion
1 small can sweet corn
2 cloves garlic
1 rasher bacon
1 large pat butter
1 liter heavy cream
Bay leaves
Flour
Salt
White pepper
Dice the bacon and cook until crisp. Set aside.
Dice the onion and cook in the bacon fat until sweet and brown. Add diced garlic and just lightly brown.
Turn the heat down and add the clams with liquid from the cans
Drain the corn and add
Add the cream
In a separate pot boil the potatoes and carrots with a couple of bay leaves until soft. Add celery at the end so it doesn't completely fall apart. Remove the bay leaves, drain and add vegetables to the clam pot.
Melt the butter in a pan and add two large spoons of flour, cook until lightly brown. Add soup to this mix until it thins enough that you can incorporate it back into the large pot.
Add the bacon back into the pot.
Simmer for 30 minutes.
Salt and pepper to taste
Serves 8-10

Good karma said:westfields on saturday was crowded, next time i go there it will be on the tube, with the car there is 2 hours free parking and because of the heaving crowds i left way before the 2 hours parking expiry. It was very packed, the up escalators were not working, but the down was and security was doing crowd control. I saw a lot of people but the percentage of people holding shopping bags was in the single digit percent. In the food court people were struggling to find seats after they bought the meal, they were carrying thier trays and desperate to sit and eat. I did not have anything to eat, the place was big, loads of shop but again cause of the crowds i did not explore properly. I will go wednesday after work on the tube and will post some picures here. Saturday it was too stuffy and hectic, not enjoyable at all.
