I am new - love my ipad - im trying to update to ios 5

my ipad starts to backup & appears to not make any progress - bar only goes 1/4 inch completed - this is frustrating!

Regarding your question, if you're not getting an error during the backup process it's possible that it's still working. iOS 5 is a full backup, clear and restore upgrade so it will take some time depending on your broadband connection speed and other factors...several hours for some.
