Language settings

Was fooling around on my ipad and changed the language from English to Arabic; how do I get back as now I can't read any of the options. I guess I need someone to tell me to click on settings, then go to the ___line and click. I am pretty sure I was on the first line in language settings when I changed from English to Arabic.

Concerning languages, I have a question.

I live and work in France and can easily change my keyboard from one language to another. But when I copy a text from another document to quote in the document I am writing, how do I get the iPad to recognise the language in the section I am pasting in my document? If I were altering the selected text, there would not be a problem, but as I am simply pasting, it underlines every word as incorrect.

Mais quand même, l'iPad est formidable!!
 
'Settings', 'General', 'International', 'Language' and choose the language you want there.

After restore my iPad , English langage, the dates are in Arabic, those in my emails as well, can't find a solution for this, I'm leaving in Dubai. Thanks

Settings > General > International > Regional Format:
