Mail keyboard gets in the way of address

If the keyboard is floating (not attached to the bottom of the screen) you can move or Dock it. Use the keyboard key at the bottom right of the keyboard. Drag it to reposition the keyboard, or tap and hold for the Dock option (which will attach it to the bottom of the screen).
If that's not it, it should be possible to scroll the mail screen so that you can see the part of the email you want. Just use a finger to drag as normal.
Finally, you can change your iPad to portrait view to see more of the message at the same time.
That said, I've neve rhad this issue. A screenshot of what is going on might help. You can use an app like Skitch to obscure any private information and email addresses.
